Portuguese Chicken

Portuguese Chicken

(Serves 4)

Ingredients
Salt
Black Pepper
15 ml Sunflower Oil
1 Onion Finely Chopped
500 g Chicken Fillet Strips
1 Red Pepper Finely sliced
10 ml Paprika
50 ml Tomato Paste
200 ml Cream
250 g Button Mushrooms Sliced
2.5 ml Cayenne Pepper.

Directions
Heat oil in a pan and lightly fry the onion with the Cayenne Pepper and Paprika.
Add the chicken and red pepper and fry for 3 minutes.
Stir in the mushroom and fry lightly for 5 minutes.
Stir in the tomato paste and cream and allow to simmer for 10 minutes.
Season with Salt and Pepper.
