Mushroom & Braised Chicken

Ingredients:
4 lbs. assorted chicken pieces with skin (breasts, legs, and thighs)
3 Tbsp. extra-virgin olive oil
5 carrots, peeled (optional)
1 yellow onion
2 lbs. mushrooms, cleaned
3 cloves garlic, crushed
3/4 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup apple cider vinegar
2 cups chicken broth

Method
Season chicken with salt and pepper.
Heat olive oil over medium-high heat.
Brown chicken in batches. Once brown, set side.
Cut carrots and onions then sauté them in pan with chicken
drippings.
Add mushrooms and cook for 6–8 minutes.
Sauté with crushed garlic for 2 minutes.
Whisk vinegars together and then add them to vegetables until
smooth.
Cook for 3-5 minutes, then slowly mix in chicken broth.
Then add chicken, cover the pot, and let simmer for 40 minutes.
